Avocados are a very versatile fruit. What was once a nice addition to many Mexican food dishes or turkey sandwiches now is making an appearance in salad dressings, with eggs and on pasta. I find myself looking for more and more ways to use the avocado in dishes and side dishes.

The good news is that avocados have many health benefits that go along with their appealing taste. Avocados have cancer fighting compounds such as oleic acid. They have carotenoid lutein that protects eye health. They lower cholesterol and have 23% of the daily recommended amounts of folate (which is great for pregnant women or women who want to become pregnant) which helps prevent against strokes.

I think this dressing is a great way to sneak avocado into my seven year olds diet. She loves a salad with creamy dressing.

Simple Avocado Dressing by Momma Cuisine




1 cup fresh avocado, pitted and out of the skin

1/3 c Greek yogurt

3 tbsp olive oil

1 tsp kosher salt

½ tsp. fresh cracked pepper

½ tsp garlic powder

1 tbsp grated onion

2 tbsp fresh lemon juice



Blend all the ingredients together until smooth.

You may have to stop the blender and scrape the sides, a couple of times until you get a smooth consistency.

Taste and adjust for seasonings, if needed.

Serve chilled.
